Overnight Oats - Raw havermout recept

The incredible Overnight Oats


This will be my first post with a (food) recepy so obviously it needed to be about one of my absolute favourites; Overnight oats!! The first time I ever made this recepy I instantly fell in love with it! It still seems to be somewhat of a secret to humankind that you can do all kinds of amaaaaaaazing love-vibe-alchemy wonders with RAW oats!! But this is about to change!  That's right, this yummy oat-recepy requiers no heat or cooking AT ALL ;)

So how does it work?

You can make loads and loads of variaties on  this one, so read this but keep in mind that any of the fruits can be replaced easily by the ones you prefer (even) better to the ones I suggest you might want to use ;) This is one of my favorite combinations so far:

for one portion you need: (all ingredients are organic)

- one empty glass mason-jar with a lid
- 1/3rd cup of oatmeal
- 1 medium sized (or dessert) spoon of chia-seeds (optional)
- 1/3 rd medium ripe banana (or a same amount any other fuit of your choice)
- 1/2 apple
- some fresh mango, sliced in cubes (a small handfull - 1/4 cup)
- 1 tablespoon of either gojiberries / raisins / dried apricots (cut in pieces) or a mix of these
- about one cup of almondmilk or any other non-dairy milk (ricemilk/cocontmilk etc)
- a pinch of cinnamon
- a tablespoon of maplesirop
- a pinch of salt*

* Keltic or Himalayan salt are my favorites. Did you know that these contain up to 100+ more minerals that benefit your body and immunesystem? All of which have been 'taken out' of the standard cheap supermarket 'salt plus added iodine' that most people are used to buying. I will add a complete post later on salts and the magic they can do for your inner and outer body :)

 How to make it?


I always start by putting all dry elements together in the jar (the oats, chia-seeds, gojiberries or other dried fruits, salt and cinnamon) - they need to fill it up about 1/3rd.


 
Now fill up the rest of the jar with the fresh fruit ingredients or your own favorite selection of fruits! :D


Then add the almond milk half way up and stir everything around so everything is mixed  together nice and evenly, then poor in more milk untill everything is covered and the milk-level comes close to the lid of the jar.

Now close the jar and put this magic-in-action in your fridge for the night. Or if you live in a cold(er) climate and you plan to eat the whole jar the next day, and your room temperature is +/- 16 celcius or less at night, you can also leave it standing on your kitchentable for the night. I prefer the latter since The Netherlands are not particulary famous for their high temperatures, and I really like the room-temperature version. But I can totally imagine being in a warm country and just craving this dish to be nice and chilled when I take it out - or when I use it as a dessert!



Now it probably looks somewhat like this (see above) - at this moment the overnight oats are not really winning a beauty-contest, but what happened inside that jar during the night will be such bliss for your tastebuds, you will instantly forgive 'it' for the way it looks ;))



Both the oats and the chiaseeds will have soaked up the almondmilk during the night and formed into a cookie-dough-kinda-mass leaving it with an incredible banana/apple-pie flavour!

Scoop the amount of overnight-oats you wish to eat in a bowl and poor the maplesirop on top and dig in!! The texture will be quite soft at this moment, so if you like some crunch on it, this is be the ideal moment to add something crunchy to it on top, like a few walnuts or some fresh blueberries for instance.

Sometimes I like to eat only half of what's in the jar, as the result is certainly quite filling. Then I might fill up the 'other' half of my breakfast bowl with a light organic goats-yoghurt, I like to sprinkle the whole with some flaxseeds and add a drop of flaxseed-oil on top of that for some of  those super healthy omega fatty acids :) Then I will eat it taking turns in taking a bite from the overnight-oats-half and then another bite of the yoghurt-half, so the 'sweet-treat-effect' of the oats, and fresh mildness of the goats-yoghurt will keep surprising me up untill the very last little bit :)
Another advantage  of not eating the whole jar at once is that you can just put the lid back on and put it back into the fridge! Your breakfast for tomorrow is already done :)

You can even make several jars ahead of time and the longer you leave them ( I experimented with leaving them sit up to 4 days) the better they get, and you won't have to spend any time preparing your breakfast for almost the whole week after spending an evening of filling up those jars with all your favorite oats-and-fruit combinations :))


Other variations:

- Coconut-chocolat

Adding a teaspoon of raw cacoa to the mixture and some raw cacoa-nibs, will turn the whole thing into a chocolat-crisp-breakfast that nobody I know can resist! It gets even better with some fresh coconut-meat or a spoonfull of dry-toasted coconut flakes on top...makes you want to fall asleep extra fast so you can get up again just to have this ;) Also this goes veeeery nice with your coffee (or coffe-alternative ;))!

- Fairytale Forest

Strawberries, blueberries, cherries and other forest-fruits give it yet a whole other flavour and atmosphere, more like waking up in a fairytale...:) You might want to put a spoonfull of red jam (with no added sugars) on top of it before serving to truly complete it :) Can you hear the little birds that come sing to you while you enjoy this breakfast with a big hot cup of herb-tea on the side?

- Indian Chai

Apart from the cinnamon and salt, also add a small pinch of ground cardemon to the mixture, be sure to be very modest with this spice since it is very strong in flavour. Another trick that will surely do the job is to simply cut open a tea-bag with an (organic and herbal) chai-flavour and just mix it in with the dried ingredients in the beginning, this will surely carry you of to Indian atmospheres when you taste the result! ;) Marvelous with a slice of orange and a little bit of (raw) honey on top to finish it of :)
